Traceability of Iberian products

Method for assigning specimens and products of the swine species to the Iberian pig population based on a specific and original database, in a broad sense. This method is effective both in being able to reliably affirm that a pig is pure or cross-bred Iberian, and in knowing whether the quality products derived from the Iberian pig (hams, shoulders, loins, etc.) really are or come from other pig breeds. The method consists of characterizing certain DNA sequences of the microsatellite type in the test samples, comparing the genetic formula obtained with a reference database and calculating the probability of assigning the sample to a certain population using computer programs and equipment. This method has been patented by our group and is currently the only reliable tool to identify the racial composition of Iberico products (link to the patent)
